I've never heard the term chicken hash before and had to smile at that name being used at the Colony. It does look delicious!
If you want to truly class up your New Year's Eve party, channel the infamous Black and White Ball thrown by Truman Capote in 1966. In order to enter the soirée, your guests must be wearing nothing but black and white. Decorate your home with deep red tablecloths, golden candelabras and dishes, and white draperies. Capote's menu consisted of the specialties at New York's Plaza Hotel, so serve chicken hash, scrambled eggs, sausages, biscuits, and spaghetti and meatballs when the clock strikes midnight. And, of course, don't forget the Champagne!
Truman Capote's Recipe For Chicken Hash
When the midnight supper was served, including the Plaza's famous chicken hash, Truman was not one of the appreciative diners. There were too many people to admire and too many stories to tell. He was his usual impish self, whispering to Joan Axelrod, the wife of the playwright and screenwriter George Axelrod, the name of the woman whose husband had wangled an invitation by telling Truman his spouse had threatened to commit suicide if she didn't get one.
There is no chicken recipe by that name, and the recipes are not attributed to anyone in particular. However I found his Colony recipe in a 1963 newspaper story.Remove bones from breasts and legs of two fryers, pound to flatten; dip in flour then in 2 eggs which have been beaten with 1 tbsp water and 1 tsp salad oil; then, in fine white bread crumbs into which 1/4 cup finely grated cheese has been mixed. Saute each breaded piece of chicken in melted butter until tender; put layer of cooked, drained spinach leave (unchopped) on hot plate. season with light sprinkle of onion salt; place chicken on top of spinach. Top with sauteed chopped mushrooms, dot with butter and sprinkle with chopped parsley.
Who roasts beets on a sheet pan? Or chickpeas? I do, with pomegranate seeds, since I read this book. There are brilliant recipes that combine meat, fish, or tofu with veggies right on the same pan. Next on my list: cauliflower tacos, spiraled hash browned rösti, haddock with garlic cream, and a giant chocolate chip cookie for all to share.
I'm a great cook. My speciality is 'Truman Capote chicken hash' as re-created from his famous Black and White Ball at the Plaza 1966. I really researched this and spoke to people who were actually there. I guard my recipe and only ever make it for special friends (it takes quite a few hours).
